Polecat

A roadkill was an unfortunate find along the 'new' Church Village by-pass close to Llantrisant. It currently resides in my freezer. Unless anyone else wants it, I looking for good recipe ideas?

First you need a good frying pan. I've got a Badger pan, should be OK for Polecat. You can borrow it if you like.

Polecate is both greasy and gamey, so you need to season well. Goes well with spinach and some balti spices. In fact, many mustelids are good in a curry.

Of course for a Weasel curry you need quite a few as there is hardly any meat on them. But it's a bit like strawberries, there's as much flavour in a small mustelid as there is in a large one. Which makes Otter a bit disappointing.

Why did they have to build the road, if they hadn't then that poor Polecat would still be alive

have you ever tried to drive from Beddau to Tonteg at peak times of the day, or in recent times, at any time of the day ?? Anyway, I wonder how many Dormice are using the spl bridges provided for them ?
